His ambition to transform Indian food into a modern global experience led him to Spain, where he worked at the world-famous restaurant El Bulli under chef Ferran Adrià. In 2010, Gaggan opened his own restaurant in Bangkok, simply named “Gaggan.” The restaurant quickly gained global attention for its playful and inventive approach to Indian cuisine. Dishes were presented as edible art, combining traditional Indian flavors with modern techniques. His famous tasting menu used emojis instead of words, reflecting his belief that food should be fun, emotional, and beyond cultural barriers.
Within a few years, Gaggan was celebrated worldwide. His restaurant topped the “Asia’s 50 Best Restaurants” list for four consecutive years and earned two Michelin stars. Yet, despite the accolades, Gaggan remained focused on innovation. In 2019, he closed his first restaurant to start a new venture, “Gaggan Anand Restaurant,” also in Bangkok. This new chapter reflected his desire to create a more personal and boundary-free dining experience.

Gaggan’s philosophy goes beyond cooking. He believes that true creativity comes from breaking rules and staying authentic. His success has inspired a generation of young chefs and entrepreneurs to think differently about Indian cuisine. He has shown that Indian food is not limited to curry and spices; it can be global, experimental, and emotionally powerful.
