From Mumbai, Sahil Baban More decided to walk on a journey that started with corporate jobs but soon evolved into something far more personal and fulfilling. With a Bachelor’s Degree in Statistics from KC College and a PGDM certification in Data Science, Sahil's background seemed perfectly tailored for the corporate world. However, despite the security and structure that corporate jobs offered, something was missing. "I always felt like I was capable of doing something more, something for myself," he share. It was this lack of satisfaction that nudged him toward the entrepreneurial path.
His inspiration for starting Bistro & Brew, a café that now enjoys a loyal customer base, didn’t come solely from his own aspirations but was largely motivated by his elder brother. "My brother has always loved cooking and creating new dishes," Sahil recalls. "It started off as a hobby but soon enough he started taking at home orders during the weekends." This passion for food sparked an idea, and together, the brothers decided to turn that shared passion into a business venture. Thus, Bistro & Brew was born, offering a unique blend of Italian and Mexican cuisines, all while focusing on pure vegetarian and Jain options.
Starting this venture, however, wasn’t without its challenges. Sahil explains, "One of the biggest challenges was a lack of support to start our own venture. Coming from a family with no prior business background also made things a bit difficult." The third hurdle was finding the perfect location. But despite these setbacks, Sahil remained steadfast in his vision and pushed forward. Today, Bistro & Brew has evolved into much more than just a café. "It’s a place that feels homely," Sahil notes. The café's charm lies not just in its cozy interiors but in its focus on delivering high-quality, homemade sauces and innovating their recipes regularly. "Our team experiments with the dishes, and we believe in giving the best quality possible to our customers," Sahil proudly shares.
When asked about his biggest achievement to date, He speaks not about accolades or awards but about something more meaningful. "For me, it’s always been about building a community where people feel connected and rooted," he explains. Bistro & Brew’s loyal customer base and two-fold revenue growth are testaments to this success."We plan to expand and serve the best vegetarian food possible, with multiple outlets in the coming years," he says confidently. Innovation, of course, remains key to staying ahead in the competitive food industry. Sahil and his team regularly hold brainstorming sessions to review the menu's performance and explore new ideas. "Endless food trials are our way of finding the ultimate path to simple, comforting food."
He Advises "Always finalize your concept first. The journey is not easy—it takes a lot of patience, hard work, and time. But trust me, the success in entrepreneurship is worth it."
